Red-Bean Chilli - 4 Blocks

Ingredients:

  • 1 1/3 teaspoons olive oil (4 Blocks fat)
  • ½ medium onion, chopped (1/4 Block Carb)
  • ½ medium green bell pepper, seeded and chopped (1/4 Block Carb)
  • 1 teaspoon chilli powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon sea or regular salt
  • ¼ teaspoon garlic powder, or 1 clove garlic, chopped
  • 1/2 cup ground beef (cooked) (2 Blocks Protein)
  • ½ cup purified water
  • 1 ¼ cup canned crushed tomatoes (1 ½ Blocks Carb)
  • ½ cup canned kidney beans, drained and rinsed (2 Blocks Carb)
  • 2 ounces low-fat Monterey Jack or soy cheese, grated or thinly sliced (2 Blocks Protein)

Directions:

  1. In a large non-stick sauté pan with a cover, heat oil over medium heat.
  2. Sauté onion and green pepper in oil for 5 minutes or until onion turns translucent.
  3. Add chilli powder, cumin, salt, and garlic. Cook another 2 minutes.
  4. Add cooked ground beef and water. Stir in tomatoes and kidney beans. Cover and simmer 10 to 30 minutes to blend flavours.
  5. Serve in a bowl, sprinkled with grated cheese
