Ingredients:
- ¼ to 1/3 cup purified water
- ¼ teaspoon ground cinnamon
- 1 tablespoon raisins (1 Block Carb)
- 1 ½ apples, such as Granny Smith or Fuji, halved, cored, and cut into eighths (3 Blocks Carb)
- 4 walnut halves, chopped (4 Blocks Fat)
- 4 ounces sharp cheddar low-fat cheese, grated (4 Blocks Protein)
Directions:
- Preheat oven to 400°F
- In a medium-size sauté pan that has a lid and can go in the oven, add water, cinnamon, raisins, and apples
- Bring to a boil over high heat, then reduce to medium, cover, and simmer until apples are tender, about 6 to 10 minutes
- Uncover pan and turn off heat
- With a wooden spoon or spatula, form apple slices into a loose circle
- Sprinkle with chopped walnuts and grated low-fat cheese
- Transfer pan to oven and cook until cheese melts, about 3 to 5 minutes
- Serve hot
