Black Bean Salsa - 4 Blocks

Ingredients:

  • ¾ cup canned black beans, drained and rinsed (3 Blocks Carb)
  • 2 tomatoes, diced (1 Block Carb)
  • ½ small red onion, chopped (1/4 Carb)
  • 1 1/3 teaspoons olive oil (4 Blocks fat)
  • Juice of 1 lime
  • 4 tablespoons cilantro, chopped
  • ½ jalapeño pepper, or to taste
  • 4 ounces cheddar cheese (sliced)

Seasoning:

  • Salt and pepper to taste

Directions:

  1. Mix black beans, tomato, red onion, olive oil, lime juice and cilantro in a medium-size bowl.
  2. Seed jalapeño by cutting in half and taking out seeds. Since the heat of the pepper is mostly in the seeds, you may want to wear rubber gloves or be careful working with the pepper.
  3. Finely chop half the pepper and add to mixture.
  4. Add salt and pepper. Taste and adjust seasoning.
  5. For more "heat," cut remaining jalapeño pepper and add to salsa.
  6. Serve on slices of cheddar cheese.
