Raspberry Fruit Salad - 4 Blocks

Ingredients:

  • 1 cup low-fat cottage cheese (4 Blocks Protein)
  • 1/3 cup mandarin orange sections (1 Block Carb)
  • ½ apple, peeled, cored, and chopped (1 Block Carb)
  • 1 kiwi fruit, peeled and chopped
  • 1 cup raspberries (1 Block Carb)
  • 4 crushed macadamia nuts (4 Blocks fat)

Seasoning:

  • Fresh ground black pepper

  • Cinnamon

Directions:

  1. In a mixing bowl, combine low-fat cottage cheese and black pepper and blend thoroughly
  2. Place a quarter cup each of peppered low-fat cottage cheese mixture on a serving plate
  3. In another mixing bowl, mix all fruits together to form a fruit salad
  4. Place fruit salad around low-fat cottage cheese on the serving plates
  5. Sprinkle with crushed macadamia nuts and cinnamon and serve

Variations:

  • Any other fruits in season can be substituted, as long as the Zone Blocks remain the same
