
Fresh pineapple makes a simple stir-fry sweet and juicy!
Ingredients:
8 oz chicken breast 1 tbsp coconut or olive oil3/4 cup pineapple, cubed, with juice
1 1/2 cups fresh broccoli, carrots... OR frozen stir-fry veggies, cooked according to package directions
1 green onion, chopped
1 clove garlic, crushed
1 tsp sesame seeds
1 tbsp almond slivers
Sea salt & pepper
1 tsp fresh ginger, grated (optional)
Directions:
Heat 1 tbsp oil and ginger in a frying pan.
Cut chicken into bite-size pieces, add to oil and brown. Stir often.
Add salt, pepper, and garlic to taste.
Add pineapple and veggies to pan, mix well.
Heat until fresh vegetables are lightly softened.
Serve topped with sesame seeds and green onion.
PWO Variation: Serve with 1/2 cup brown rice or quinoa (2C)
