Joanie's Easy Thai Coconut Chicken

Ingredients:

3 chicken breasts, cut into smaller portions or stir-fry strips
1/4 can coconut milk
2 tbsp "Thai Spice" (curry, ginger...)

Marinade 1 hr or overnight

Heat frying pan.
Add 1 tbsp oil, 1 tsp chili flakes (optional).
Add chicken and marinade.
Simmer over low heat 15 - 20 minutes, until chicken is cooked.

Glen's Carne Asada (Lime Marinade)

Ingredients:
1 1/2 lb Flank Steak

Marinade:
1 cup Lime Juice
1/2 cup Vegetable Juice (V8 etc)
1/4 cup chopped green onions
2 cloves garlic minced,
1 tbsp coriander (cilantro) or parsley
1/2 tsp sea salt
1/4 tsp pepper.

Marinade the steak in a shallow bowl, covered, or in a plastic ziploc.
Refrigerate 3-4 hours or overnight.
Grill 7 minutes or so per side (depending on thickness) and then remove steak and let stand for 10 minutes (covered).
Cut steak diagonally across grain into thin pieces.

Liz's Allergen-Free Protein Bars

Ingredients:

1/2 cup coconut oil, melted
2-4 tablespoons maple syrup
4 teaspoons cocoa powder
1/2 teaspoon vanilla
1/8 teaspoon salt
1 cup flaked dried coconut, unsweetened
5 tbsp hemp hearts
3 scoops whey protein powder, any flavour
1/2 cup coconut flour
4 eggs OR 1/2 cup coconut milk
2 tbsp ground flax

Mix well.
If the mixture doesn't hold together enough, slowly add coconut milk
until it holds.
Bake at 375F for 14-16 mins.

Oatmeal Bake

Ingredients:
3 cups rolled oats
2 tsp. baking powder
½ cup applesauce
8 whole eggs
1 cup whole milk
2 scoops protein powder
1 1/2 cups fresh or frozen berries
5 teaspoons olive oil
1/2 tsp cinnamon
1/2 tsp sea salt
1 tsp vanilla

Directions:
Preheat oven to 350 degrees
Mix the dry ingredients in one bowl
Combine milk, eggs and vanilla extract in another bowl
Add milk mixture to dry ingredients, fold in strawberries or blueberries.
Mix in 4 teaspoons of olive oil.
Coat a 9x12 non-stick pan with one teaspoon of olive oil.
Place mixture into pan.
Bake about 25-30 minutes.
Test the center with a toothpick.

Makes approximately 12 blocks.

Pineapple Chicken

Ingredients:

8 oz chicken breast 1 tbsp coconut or olive oil
3/4 cup pineapple, cubed, with juice
1 1/2 cups fresh broccoli, carrots... OR frozen stir-fry veggies, cooked according to package directions
1 green onion, chopped
1 clove garlic, crushed
1 tsp sesame seeds
1 tbsp almond slivers
Sea salt & pepper
1 tsp fresh ginger, grated (optional)

Directions:

Heat 1 tbsp oil and ginger in a frying pan.
Cut chicken into bite-size pieces, add to oil and brown. Stir often.
Add salt, pepper, and garlic to taste.
Add pineapple and veggies to pan, mix well. Heat until fresh vegetables are lightly softened.

Serve topped with sesame seeds and green onion.

PWO Variation: Serve with 1/2 cup brown rice or quinoa (2C)

Makes 1-2 servings.
