Lemon Pepper Chicken

This is one of the easiest ways to make a really tasty, re-heatable chicken dish. Great by itself, on a salad or with stir-fried veggies.

Ingredients:
4 chicken breasts
2 tbsp butter
1 tsp sea salt
1 tsp pepper
1 tbsp lemon juice

Optional seasonings: oregano, paprika, slivered almonds

Directions:
Sautee chicken as breasts or in smaller chunks in butter until just cooked through.
Add lemon juice, salt, and pepper, and almonds if desired.
Cook 2 more minutes stirring and coating well.
